Bharta is one of my favorite dishes, and certainly one of my favorite eggplant preparations. I'm planning to include the bharta recipe I use later in the summer, when my larger eggplants start coming in. The Japanese eggplants are incredibly prolific, but they don't have the girth that I want when I make bharta. Have you ever ate/cooked Baigan Bharta? It's an Indian eggplant dish that is very good. A few years ago I worked at an Indian restaurant in Santa Barbara that made this. It was really good!
